Pumpkin Spice Latte Chia Pudding

Pumpkin spice latte season is here, and we’re leaning all the way in. But instead of another pricey coffee shop run, we turned the PSL into a nourishing breakfast that’s packed with protein, fiber, and hormone-supportive nutrients.

This chia pudding is creamy, cozy, and layered with espresso and pumpkin spice for those fall vibes. Each serving delivers around 25g of protein and 10g of fiber, and when you add a scoop of beeya seed cycling blends, you’re not just sprinkling on seeds, you’re giving your cells exactly what they need to function their best.

Prep Time: 5 minutes
Chill Time: 2 hours or overnight

Ingredients:

  • 1 cup Greek yogurt, divided
  • 2 ½ Tbsp chia seeds
  • 1 Tbsp maple syrup
  • ¼ cup freshly brewed coffee or espresso
  • 1 Tbsp pumpkin puree
  • 1 scoop beeya seed cycling blends
  • ¼ tsp pumpkin pie spice
  • 1 tsp cacao powder (for dusting)

Instructions:

  1. Mix: In a container, stir together ¾ cup Greek yogurt, chia seeds, maple syrup, coffee, pumpkin puree, pumpkin pie spice, and beeya seed cycling blends until fully combined.
  2. Chill: Cover and refrigerate overnight or at least 2 hours until thickened.
  3. Top: Before serving, add the remaining ¼ cup Greek yogurt and dust with cacao powder.
  4. Serve: Enjoy your hormone-friendly PSL breakfast with all the cozy vibes.
