Viral Microchop Salad Recipe

The most fun way to get your greens and beeya in on the daily.

Is this viral recipe a salad or a dip? We don't really know, but what we do know is that it's totally delicious and a super fun way to get your greens in this summer.

We've included two of our favorite hormone-supporting vegetables, arugula and cabbage. These cruciferous vegetables create sulforaphane when chewed, a compound that supports our detoxification pathways.

Ingredients:

  • 2 cups arugula, finely chopped
  • 3 Persian cucumbers, finely chopped
  • 1/2 small cabbage, finely chopped
  • 5 green onions, finely chopped
  • 1 jalapeño, finely chopped
  • 1/2 cup parsley, finely chopped
  • 1/2 lemon, juiced
  • 1/3 cup ranch dressing (we love Primal Kitchen, or see alternative in instructions below)
  • sea salt and pepper
  • beeya seed cycling blends (optional)
  • tortilla chips for serving

Instructions:

  1. Place the finely chopped arugula, cucumbers, cabbage, green onions, jalapeño, and parsley into a large salad bowl. Pro tip: If you're in a hurry, simply toss each ingredient one at a time into a food processor and pulse until finely chopped.
  2. Add the ranch dressing, lemon juice, sea salt, and pepper to the bowl. Toss everything together until well combined. Alternative Dressing: If you prefer a homemade dressing, mix 1/4 cup avocado oil mayonnaise with 2 Tbsp Greek yogurt, 1 tablespoon Dijon mustard, 1/2 tsp onion powder, 2 Tbsp dill, and 3 Tbsp olive oil. Season with sea salt and pepper and use this in place of the ranch dressing.
