Triple Veggie Chocolate Muffins

Ingredients:
- 1 1/2 cups all-purpose einkorn flour
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1/2 cup dark chocolate chunks
- 1 cup carrots, grated
- 1 cup zucchini, grated
- 1 cup baby spinach
- 1/2 cup plain Greek yogurt
- 1/2 cup maple syrup
- 1/4 cup avocado oil
- 2 eggs
- 1 tsp vanilla extract
- 1 scoop beeya seed cycling blends, for topping
Instructions:
- Preheat: Set oven to 425°F and line a 12-cup muffin tin with liners (or use a silicone pan).
- Mix Dry Ingredients: In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- Blend The Veggies: In a blender or food processor, add grated carrots, zucchini, spinach, yogurt, maple syrup, avocado oil, eggs, and vanilla. Blend until completely smooth.
- Combine: Pour the blended mixture into the dry ingredients and stir gently until just combined. Fold in chocolate chunks.
- Bake: Divide batter evenly into muffin cups. Bake at 425°F for 5 minutes, then reduce heat to 350°F (without opening the oven) and bake for another 15–18 minutes, or until a toothpick comes out clean.
- Top: Let cool slightly, then sprinkle each muffin with beeya seed cycling blends for a boost of nutrients and crunch.
