Ingredients:
Crust:
- 3 scoops beeya seed cycling blends
- 3 Tbsp toasted shredded coconut
- 2 Tbsp melted coconut oil
- 1 Tbsp honey
- pinch of sea salt
Bars:
- 1 ½ lemons, juiced and zested
- ¼ tsp ground turmeric
- 1 ½ cups cottage cheese
- ½ tsp vanilla bean paste or extract
- 6 Tbsp honey
- 1 ½ tsp gelatin powder
Instructions:
- In a bowl, mix together the crust ingredients until well combined. Press the mixture into a small paper-lined form to create the crust.
- In a small bowl, bloom the gelatin with a splash of water, then microwave for just a few seconds until melted.
- In a blender, combine the lemon juice and zest, turmeric, cottage cheese, vanilla, honey. Blend until smooth. Then add the melted gelatin and pulse to combine.
- Pour the lemon mixture over the crust and spread evenly.
- Chill in the refrigerator for 4 hours, or until set. The freezer can speed things along if you are in a hurry.
- Once set, slice into 6 bars and enjoy!
Note:
These bars are also delicious with other citrus fruits like lime, orange, and blood orange. Each bar contains 1/2 scoop of beeya.
