Strawberry Cupcake Baked Oats Recipe

Because mornings should be deliciously delightful!

We may not be running through fields of strawberries just yet, but this healthier sweet treat has us transported to a sunny picnic with our summer fling-to-be (sounds nice, right?). For now, these Strawberry Cupcake Baked Oats are perfect for a solo breakfast in bed or Galentine's Day brunch 🍓

Baked Oats:

  • ⅓ cup oat flour
  • ½ cup almond milk
  • 2 eggs
  • 1 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 Tbsp almond butter
  • ¼ tsp baking powder
  • ¼ tsp nutmeg
  • a handful of chopped strawberries


  • 3 Tbsp greek yogurt
  • 2 strawberries
  • 1 tsp honey (optional)
  • ½ tsp vanilla extract

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together oat flour, almond milk, eggs, maple syrup, vanilla extract, almond butter, baking powder, and nutmeg.
  3. Gently fold in the chopped strawberries into the mixture.
  4. Pour the batter into a greased baking dish.
  5. Bake for about 25 minutes or until the oats are set and the top is golden brown.
  6. Once baked, let it cool slightly, then slice into servings.
  7. Top each serving with a dollop of Greek yogurt, fresh strawberries, a drizzle of honey, a splash of vanilla, and a sprinkle of Beeya.
