STONE FRUIT TOMATO & BURRATA SALAD

Ingredients:

Vinaigrette:

  • 1/3 cup olive oil
  • 2 Tbsp rice vinegar
  • 1 tablespoon honey
  • 1 shallot, minced
  • 1 lemon, zested & juiced
  • handful chopped fresh basil
  • handful chopped fresh mint
  • sea salt and black pepper

Salad:

  • 1 heirloom tomato, slices
  • 2 nectarines, sliced into wedges
  • 1 cup pitted fresh cherries
  • 1 red chili pepper, thinly sliced
  • 8 ounces burrata cheese, at room temperature
  • 1 scoop beeya seed cycling blends

Instructions:

  1. Make the vinaigrette: In a glass jar, combine olive oil, rice vinegar, honey, minced shallot, lemon zest and juice. Add chopped basil and mint. Season with sea salt and black pepper. Shake until combined. Taste and adjust seasoning as desired.
  2. Prepare the salad: Arrange the heirloom tomato slices, nectarine wedges, cherries, and sliced chili pepper on a platter. Break the burrata on top of the salad, then drizzle the vinaigrette over everything.
  3. Finish and serve: Sprinkle with beeya seed cycling blends if using and garnish with additional fresh herbs if desired. Serve and enjoy!

For a light and summery dinner option, consider adding grilled fish or chicken.
