Shrimp Kale Caesar Salad Recipe

The most nutritious caesar salad made with dino kale, plus the dressing is dairy-free!

Indulge in a bowl of fresh nourishing greens with our Shrimp Kale Caesar Salad. We've given this classic dish a twist by going dairy free and replacing parmesan with nutritional yeast. We've also upgraded the greens for dino kale for maximum nutrition. The star of the show? The garlic shrimp of course! Top it all off with toasted almond slivers for some crunch and you have a salad that's truly satisfying. Get ready to fall in love. It's the Caesar of the season!

Ingredients:

Salad:

  • 4 cups dino kale leaves, stemmed and chopped
  • ½ cup toasted sliced almonds
  • 1 heirloom or some cherry tomatoes
  • 1-2 soft boiled eggs
  • 1 sliced shallot

Garlic Shrimp:

  • 1 lb raw shrimp, peeled and deveined
  • 1 cloves garlic, minced
  • ¼ cup chopped parsley
  • 2 Tbsp olive oil
  • sea salt and pepper, to taste

Dressing:

  • 3 Tbsp nutritional yeast (or ¼ cup grated parmesan) 
  • 3 Tbsp olive or avocado oil
  • 2 Tbsp fresh lemon juice
  • ½ Tbsp Dijon mustard
  • ⅓ cup avocado oil mayonnaise
  • 1-2 cloves garlic, crushed
  • a little drizzle of honey
  • a couple dashes of worcestershire sauce
  • sea salt to taste and lots of fresh cracked pepper

Instructions:

  1. Season the shrimp with salt and pepper then toss them in a bowl with the crushed garlic, parsley, and olive oil. Allow to marinate for a few minutes while making the dressing and heating up a frying pan over medium heat.
  2. To make the dressing, combine all of the ingredients in a bowl or wide mouth jar (Note: if you like things extra garlicky use 2 cloves, otherwise 1 is enough). Whisk until smooth or use an immersion blender and give it a blitz. Taste and adjust seasoning to your palette. You may want a pinch more salt, a tad more honey, or perhaps some extra lemon juice. 
  3. Add the raw shrimp to the warm skillet and cook for 3-4 minutes, or until they turn pink and opaque. If you have leftover lemon, feel free to squeeze some juice over the shrimp to finish.
  4. Toss the chopped kale with some of the dressing in a large bowl. Massage for a minute or two if you want more tender kale. Save the remaining dressing for extra drizzling when serving. 
  5. To serve, plate the kale on two plates, then top with sliced shallots, egg halves, tomato slices, toasted almonds, and the garlic shrimp. Finish with an extra drizzle of dressing if desired and enjoy your flavorful and nutritious Shrimp Kale Caesar.
