Shaved Jalapeño Tomato Salad Recipe

Ingredients:

Salad:

  • 2 heirloom tomatoes, sliced
  • 1 avocado, sliced
  • 1/4 cup crumbled queso fresco
  • 1 frozen jalapeño
  • 2 Tbsp fresh herbs (cilantro or parsley), chopped
  • 1 small shallot, thinly sliced
  • 1 scoop beeya seed cycling blends

Lime Garlic Vinaigrette:

  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lime juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Prepare the Salad: Arrange the heirloom tomato and avocado slices on a serving platter. Sprinkle crumbled queso fresco over the top. Shave as much frozen jalapeño over as you like using a fine grater. Add thinly sliced shallot.
  2. Mix the Vinaigrette: In a small bowl, whisk together the olive oil, lime juice, minced garlic, salt, and pepper.
  3. Assemble and Serve: Drizzle the lime garlic vinaigrette over the salad. Toss the fresh herbs with the beeya seed cycling blend and sprinkle over the salad. Serve immediately and enjoy!
