Tiramisu Protein Bars

Ingredients:
Coffee Cream Filling:

1 tsp instant espresso powder (adjust to taste)

½ cup cottage cheese

2 Tbsp vanilla protein powder

1 Tbsp maple syrup
Base Layer:

4 scoops beeya seed cycling blends

1 Tbsp melted coconut oil

1 Tbsp maple syrup

1 Tbsp nut butter (we used cashew)
Chocolate Coating:

½ cup melted dark chocolate

1 tsp coconut oil
-
cocoa powder for dusting (optional)
Instructions:
- Prepare the Coffee Cream Filling: Blend the cottage cheese, espresso powder, vanilla protein powder, and maple syrup until smooth and creamy. Pour the cream filling evenly into a silicone bar mold (or into a parchment lined form, and you can cut into bars later). Pop in the freezer until set.
- Make the Base: Stir together beeya seed cycling blends, melted coconut oil, maple syrup, and nut butter until sticky. Press the mixture evenly over the set coffee cream. Freeze again until firm.
- Dip in Chocolate: Once firm, remove the bars from the mold and dip each one into melted dark chocolate, fully coating each bar. Place the bars on a parchment-lined tray and return to the freezer for a few minutes to set the chocolate. Dust with cocoa powder if desired.
