Roasted Corn & Avocado Pico Recipe
The new guac on the block, this chip dip is somewhere between a pico & and a gauc with a roasted corn bonus.
Prep time: 5 mins
- ½ avocado, finely diced (choose a slightly firm avocado if possible)
- ¼ tomato, finely diced
- ¼ red onion, finely diced
- ½ jalapeño, finely diced
- 1 Tbsp cilantro, chopped
- ¼ cup roasted corn (canned or frozen corn works too)
- ½ lime, juiced
- Pinch of sea salt
- Toss everything together, serve with tortilla chips and a scoop of beeya if you haven’t had your daily dose of hormone support yet.
