Raspberry Cheesecake Cups Recipe

Ingredients:

Crust:

  • 3 scoops beeya seed cycling blends
  • 1 Tbsp melted coconut oil
  • 1 Tbsp honey
  • pinch of sea salt

Cups:

  • ½ lemon, juiced and zested
  • 1/2 cup raspberries
  • 1 ½ cups cottage cheese
  • ½ tsp vanilla bean paste or extract
  • 6 Tbsp honey
  • 1 tsp gelatin powder

Instructions:

  1. In a bowl, mix together the crust ingredients until well combined. Press the mixture into small paper-lined muffin cups to form the crusts.
  2. In a blender, combine the raspberries, lemon juice and zest, cottage cheese, vanilla, and honey. Blend until smooth.
  3. In a small bowl, bloom the gelatin with a splash of water, then microwave for about 10 seconds until melted. Add the melted gelatin to the cheesecake mixture and pulse to combine.
  4. Divide the mixture amongst the cups and top with fresh raspberries if desired. Chill in the freezer for 1 hour, or in the fridge until set.
  5. Once set, enjoy!

        These cups can be made using any berry of choice. Each cup contains 1/2 scoop of beeya.
