Ingredients:
Crust:
- 3 scoops beeya seed cycling blends
- 1 Tbsp melted coconut oil
- 1 Tbsp honey
- pinch of sea salt
Cups:
- ½ lemon, juiced and zested
- 1/2 cup raspberries
- 1 ½ cups cottage cheese
- ½ tsp vanilla bean paste or extract
- 6 Tbsp honey
- 1 tsp gelatin powder
Instructions:
- In a bowl, mix together the crust ingredients until well combined. Press the mixture into small paper-lined muffin cups to form the crusts.
- In a blender, combine the raspberries, lemon juice and zest, cottage cheese, vanilla, and honey. Blend until smooth.
- In a small bowl, bloom the gelatin with a splash of water, then microwave for about 10 seconds until melted. Add the melted gelatin to the cheesecake mixture and pulse to combine.
- Divide the mixture amongst the cups and top with fresh raspberries if desired. Chill in the freezer for 1 hour, or in the fridge until set.
- Once set, enjoy!
