Ingredients:

  • 1 purple carrot, finely chopped
  • ½ small red cabbage, finely chopped
  • ½ red onion, finely chopped
  • ½ cup pickled beets, finely chopped
  • 3 Tbsp apple cider vinegar
  • 3 Tbsp pickled beet juice
  • 2 tsp Dijon mustard
  • 1 Tbsp honey
  • ¼ cup avocado oil
  • sea salt and pepper to taste

  • 1 handful chives, finely chopped
  • 1 handful of feta cheese

Instructions:

  1. In a large bowl, combine the purple carrot, red cabbage, red onion, and pickled beet. Tip: to make the mincing process faster you can pulse each ingredient in a food processor.
  2. In a small bowl, whisk together the vinegar, mustard, honey, oil, and beet juice until well combined.
  3. Pour the dressing over the chopped vegetables and toss everything together until evenly coated.
  4. Season with sea salt and pepper to taste.
