Protein Pumpkin Cinnabon Pancake
Makes: 4 pancakes
Prep Time: 5 minutes
Cook Time: 15 minutes
Ingredients:
Pancakes:
- ½ cup cottage cheese (we love the brand Good Culture)
- 1 cup oat flour (or einkorn flour if you're not gluten-free)
- 2 eggs
- ¼ cup pumpkin puree
- 1 tsp pumpkin pie spice
- 1 tsp maple syrup
- pinch of sea salt
- 1 tsp vanilla extract
- 1 tsp baking powder
- olive oil for frying
Cinnamon Swirl:
- 3 Tbsp maple syrup
- 2 tsp cinnamon
Frosting Drizzle:
- ½ cup cream cheese
- 2 Tbsp maple syrup
- ½ tsp vanilla extract
- 2 tsp milk of choice
- 1 scoop beeya seed cycling blends
Instructions:
- In a blender, combine cottage cheese, oat flour, eggs, maple syrup, pumpkin puree, pumpkin pie spice, vanilla extract, and sea salt. Blend until smooth.
- Add baking powder to the batter and stir to combine.
- Heat a skillet over medium heat with a drizzle of olive oil. Pour some of the batter into the skillet.
- While the pancake is cooking, stir together the cinnamon swirl ingredients: maple syrup and cinnamon.
- Drizzle the cinnamon swirl over the pancake in a spiral pattern as it cooks. When the edges are set and golden, flip the pancake and cook until golden on both sides.
- For the frosting drizzle, whisk together cream cheese, maple syrup, vanilla extract, and milk until smooth.
- Serve the pancakes warm, drizzle with the cream cheese frosting, and sprinkle beeya seed cycling blends on top for added balance.
