Ingredients:

Ice Cream:

  • 1 cup milk of choice
  • ½ tsp saffron threads (crushed)
  • 1 tsp grass-fed gelatin
  • ⅔ cup cottage cheese
  • 2 Tbsp vanilla protein powder (we used Truvani)
  • 3 Tbsp maple syrup
  • 1 tsp vanilla extract

Instructions:

  1. Bloom the gelatin: Combine the gelatin with a small amount of milk and the saffron in a microwave-safe bowl. Let it sit for a few minutes to bloom, then microwave until the gelatin has fully dissolved.
  2. Blend the ice cream base: In a blender, add the milk, cottage cheese, protein powder, dissolved gelatin mixture, maple syrup, vanilla extract, and crushed saffron threads. Blend until smooth and well-combined.
  3. Freeze the mixture: Pour the blended mixture into a CREAMi pint. Freeze for a minimum of 12 hours, or overnight.
  4. Prepare for serving: When ready to serve, let the ice cream sit at room temperature for about 10 minutes. 
  5. Spin the mixture: Using a CREAMi machine or similar ice cream maker, spin the mixture on the light ice cream setting. Re-spin one or two more times if needed to achieve your desired consistency.
  6. Serve: Scoop into a bowl and top with beeya seed cycling blend if desired.

Alternative Instructions:

Prepare the ice cream base and freeze in ice cube trays until solid. Once frozen, pulse cubes in a blender with a splash of your milk of choice. The mixture will be coarse at first but as you continue mixing it will become creamy. Use a spatula to scrape down the sides as needed.
