Mona Vand’s Massaged Arugula Salad

Prep time: 5 mins


  • 2 handfuls of arugula
  • a good drizzle of olive oil
  • a squeeze of fresh lemon juice
  • 1/2 a medium cucumber, chopped or shaved
  • a small handful fresh basil, chopped
  • a pinch of sea salt
  • ½-1 scoop beeya 


  1. Add the arugula and olive oil to a bowl and massage gently for about 1 minute.
  2. Add the rest of the remaining ingredients and toss to combine.
