Mona Vand’s Massaged Arugula Salad

Prep time: 5 mins
- 2 handfuls of arugula
- a good drizzle of olive oil
- a squeeze of fresh lemon juice
- 1/2 a medium cucumber, chopped or shaved
- a small handful fresh basil, chopped
- a pinch of sea salt
- ½-1 scoop beeya
- Add the arugula and olive oil to a bowl and massage gently for about 1 minute.
- Add the rest of the remaining ingredients and toss to combine.
