Miso Shirataki Noodle Jar Recipe

Skip the microwave noodles - this jar hack is 1000 times more fresh and tasty, plus it’s a breeze to meal prep.

Serves: 1

Prep time: 8 mins

Ingredients:

  • 1 Tbsp Miso paste
  • 2 Tbsp tamari or light soy sauce
  • 1 tsp maple syrup
  • 1 crushed garlic
  • 1-inch chunk fresh garlic, microplaned
  • a pinch of chili flakes
  • 1/4 cup sliced scallions
  • 3/4 cup broccoli slaw or other veggie slaw mix - see tips below
  • 1/2 cup cooked chicken or shrimp
  • 1 cup shirataki noodles
  • a handful of cilantro
  • boiling water

Steps:

  1. Start with a jar that can hold around 3 cups in volume. Then add the miso paste, tamari, maple syrup, garlic, ginger, chili flakes, and scallions.
  2. Next add the broccoli slaw. We think it makes for easy meal prep to use a ready-chopped slaw mixture but you can use all sorts of veggies you might already have around. Just thinly sliced them or julienne them and add them to your jar. *some veggie ideas below.
  3. Add the chicken (or shrimp if using instead). Then make sure to rinse and drain the shirataki noodles before adding to the jar too.
  4. Finish with some fresh cilantro and your jar is ready to put the lid on and store in the fridge.
  5. When ready to eat, pour hot water over until covering the ingredients then stir well to dissolve the miso and combine all the flavors.

*Some veggies that are perfect in this noodle soup are - mushrooms, snow peas, carrots, bok choy, peppers, onions, purple cabbage, and kale.
