Loaded Protein Guac Recipe

Creamy, tangy guac topped with a spicy fresh corn salsa.

Ingredients:

Guac:

  • 1 avocado
  • ⅓ cup cottage cheese
  • ½ lime, juiced
  • 1 garlic clove, crushed
  • pinch of sea salt

Topping:

  • ¼ cup corn (canned or fresh)
  • ¼ jalapeno, minced
  • 1 green onion, sliced
  • 3 cherry tomatoes, diced
  • lime juice
  • cilantro
  • tortilla chips for serving

Instructions:

  1. Combine all of the guac ingredients in a blender and mix until smooth. Pour into a serving bowl.
  2. Toss together the corn, jalapeno, green onion, and tomato in a separate bowl. Squeeze some fresh lime juice over, sprinkle a bit of cilantro, and season with a pinch of sea salt if desired. 
  3. Scoop the corn salsa over the guac and serve with your favorite tortilla chips (We love the brand Siete because they use avocado oil for cooking process).
