Makes : 1 cup
Prep time: 7 mins + roasting & cooling time
- 2 cups natural cashews
- 1 tsp sea salt
- Roast the cashews on a sheet tray at 400F for 5-10 mins until golden. Allow to cool completely before continuing.
- Add the cashews to a food processor with the salt and mix for about 1 minute, scrape down the sides and mix for another minute, then scrape down again.
- Continue mixing the cashews for about 5-7 minutes in total. They will go through several stages, first coarse, then it will draw together into a ball, then it will begin to release, and finally it will be a dry butter, but if you keep going it will eventually become smooth (about 7 mins).
- You can add 1-2 tablespoons of avocado oil towards the very end if you prefer a runny nut butter.
