While these marshmallows are delightful on their own, they also contain freeze-dried strawberries and vanilla, which add a little extra zing and a healthy dose of antioxidants. And to make them even more fun, we’ve dipped them in dark chocolate and sprinkled them with a touch of Valentine’s love. It’s the perfect balance of sweet and healthy!

Ingredients:
- 1 cup filtered water (divided)
- 1 cup honey
- 3 Tbsp grass-fed gelatin
- ¾ cup freeze-dried strawberries, blended into a powder
- ¼ tsp salt
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 4 oz dark chocolate (for dipping)

Instructions:
- Bloom the Gelatin: Place ½ cup of water in the bowl of a stand mixer. Sprinkle the gelatin on top and let it bloom while you prepare the rest.
- Prepare the Pan: Line a small pan (8x8 or smaller) with parchment paper. Make sure to do this before the next steps as the marshmallows will set quickly and it will be hard to pour them if this isn’t prepped ahead of time.
- Make the Syrup: In a saucepan, combine the remaining ½ cup of water with the honey. Heat on medium and bring to a boil. Let it boil until it reaches between 235-242°F (about 10 minutes), then turn off the heat.
- Mix the Gelatin: With the stand mixer on low, slowly pour the hot syrup into the gelatin mixture. Once incorporated add the freeze-dried strawberries, vanilla, lemon juice, and salt, then increase the speed to high. Beat until the mixture becomes light and fluffy, about 8 minutes.
- Pour the Marshmallows: Once the marshmallow mixture is fluffy, scoop it into the prepared pan and smooth it out evenly. Let it sit to cool. The marshmallows should set within 30 minutes.
- Dip in Chocolate: Once set, cut into squares, a scissors is good for this. Melt the chocolate, then dip each marshmallow. For an extra fun touch, sprinkle with Valentine’s sprinkles or dip into beeya seed cycling blends.
- Store & Enjoy: Let the chocolate harden, then store your marshmallows in an airtight container at room temperature.
