Green Shakshuka Eggs Recipe

Ingredients:

Shakshuka:

  • ¼ cup broth (chicken or veg)
  • ½ cup dino kale (or spinach)
  • ¼ cup salsa verde
  • olive oil
  • 2 sliced green onions
  • 2 eggs
  • sea salt & pepper

Instructions:

  1. In a blender, combine broth, dino kale (or spinach), and salsa verde. Pulse until minced but not entirely smooth.
  2. Heat a generous drizzle of olive oil in a skillet over medium heat. Add the green onions and sauté for 30 seconds. Add the green sauce mixture and bring to a simmer. Taste and season with salt and pepper as desired.
  3. Create two wells in the sauce and crack the eggs into them. Cover the skillet and let the eggs cook to your desired level of doneness, about 3-5 minutes.
  4. Serve the green shakshuka hot, garnished with chopped cilantro, crumbled feta, sliced jalapeno, avocado slices, and your current phase of beeya. Don't forget some toast for dipping!
