Ingredients:
Shakshuka:
- ¼ cup broth (chicken or veg)
- ½ cup dino kale (or spinach)
- ¼ cup salsa verde
- olive oil
- 2 sliced green onions
- 2 eggs
- sea salt & pepper
Optional Toppings:
- chopped cilantro
- crumbled feta
- sliced jalapeno
- sliced avocado

Instructions:
- In a blender, combine broth, dino kale (or spinach), and salsa verde. Pulse until minced but not entirely smooth.
- Heat a generous drizzle of olive oil in a skillet over medium heat. Add the green onions and sauté for 30 seconds. Add the green sauce mixture and bring to a simmer. Taste and season with salt and pepper as desired.
- Create two wells in the sauce and crack the eggs into them. Cover the skillet and let the eggs cook to your desired level of doneness, about 3-5 minutes.
- Serve the green shakshuka hot, garnished with chopped cilantro, crumbled feta, sliced jalapeno, avocado slices, and your current phase of beeya. Don't forget some toast for dipping!
