Green Chopped Salad Recipe
A light, fresh, and vibrant salad that comes together in minutes.
Serves: 2-4 portions
Prep time: 10 mins
Ingredients:
- 2 cups chopped lettuce
- 1 cup chopped parsley
- 1 cup chopped cucumber
- 1 cup chopped green onion
- 1/2 lemon, juiced
- 1/2 a small avocado
- 2 Tbsp olive oil
- sea salt
- handful of crumbled feta
- beeya seed cycling blends as a crunchy nutritious topping
Steps:
- Combine all of the chopped vegetables in a bowl.
- Add the lemon juice, avocado, oil, and a pinch of salt to a jar, then use an immersion blender to mix everything until smooth. Thin with water if desired.
- Pour the avocado dressing over the chopped salad and toss, then garnish with crumbled, feta and beeya.
