Green Chopped Salad Recipe

A light, fresh, and vibrant salad that comes together in minutes.

Serves: 2-4 portions
Prep time: 10 mins

Ingredients:

  • 2 cups chopped lettuce
  • 1 cup chopped parsley
  • 1 cup chopped cucumber
  • 1 cup chopped green onion
  • 1/2 lemon, juiced
  • 1/2 a small avocado
  • 2 Tbsp olive oil
  • sea salt
  • handful of crumbled feta
  • beeya seed cycling blends as a crunchy nutritious topping

Steps:

  1. Combine all of the chopped vegetables in a bowl.
  2. Add the lemon juice, avocado, oil, and a pinch of salt to a jar, then use an immersion blender to mix everything until smooth. Thin with water if desired.
  3. Pour the avocado dressing over the chopped salad and toss, then garnish with crumbled, feta and beeya.
