Garlic Zucchini Fritter Pancake Recipe

A gluten-free version of a zucchini season favorite, crispy & light with jalapeño sauce to go with.

Serving: 1 large fritter

Prep time: 8 mins


Ingredients:

  • 1 cup zucchini, shredded and liquid squeezed out
  • 1 egg
  • 2 Tbsp oat flour
  • 2 Tbsp arrowroot flour or cornstarch
  • 1 clove garlic, crushed
  • 2 tbsp chopped parsley
  • sea salt & black pepper
  • Avocado oil for frying

Jalapeño Yogurt Sauce:

  • ¼ cup thick yogurt
  • 1 Tbsp avocado oil mayo
  • 1 Tbsp chopped jalapeño
  • 1 Tbsp sliced scallions
  • Sea salt & black pepper

Garnish:

  • Arugula
  • Cherry tomatoes
  • Sliced shallot
  • Scoop of beeya

Steps:

  1. Stir all of the fritter ingredients together in a bowl.
  2. Heat oil in a pan over medium heat and fry the fritter batter until golden, then flip and fry until golden on both sides.
  3. Stir all of the yogurt sauce ingredients together and garnish the fritter with the sauce followed by arugula, sliced shallots or red onion, tomato and a sprinkle of your current phase of beeya for hormone support.
