Garlic Zucchini Fritter Pancake Recipe
A gluten-free version of a zucchini season favorite, crispy & light with jalapeño sauce to go with.
Serving: 1 large fritter
Prep time: 8 mins
Ingredients:
- 1 cup zucchini, shredded and liquid squeezed out
- 1 egg
- 2 Tbsp oat flour
- 2 Tbsp arrowroot flour or cornstarch
- 1 clove garlic, crushed
- 2 tbsp chopped parsley
- sea salt & black pepper
- Avocado oil for frying
Jalapeño Yogurt Sauce:
- ¼ cup thick yogurt
- 1 Tbsp avocado oil mayo
- 1 Tbsp chopped jalapeño
- 1 Tbsp sliced scallions
- Sea salt & black pepper
Garnish:
- Arugula
- Cherry tomatoes
- Sliced shallot
- Scoop of beeya
Steps:
- Stir all of the fritter ingredients together in a bowl.
- Heat oil in a pan over medium heat and fry the fritter batter until golden, then flip and fry until golden on both sides.
- Stir all of the yogurt sauce ingredients together and garnish the fritter with the sauce followed by arugula, sliced shallots or red onion, tomato and a sprinkle of your current phase of beeya for hormone support.
