French Toast Cinnabon Roll-Ups Recipe

Ingredients:

Protein wrap:

  • 1 cup full-fat cottage cheese
  • 2 eggs
  • 1/2 tsp corn starch
  • 1 tsp maple syrup
  • 1/2 tsp vanilla

Filling:

  • 1/3 cup medjool dates, pitted and soaked in warm water for 15 mins (reserve soaking water)
  • 2 Tbsp melted grass-fed butter
  • 3/4 tsp cinnamon
  • 1 scoop beeya seed cycling blends

Toppings:

  • 1/2 Tbsp melted butter 
  • 2 tsp coconut sugar
  • 1/4 tsp cinnamon
  • 2 Tbsp vanilla bean yogurt (or create a simple glaze with a little greek yogurt, maple syrup, and vanilla extract)


Instructions:

  1. Preheat your oven to 350°F and line a 9x13 baking sheet with parchment paper. Lightly spray or brush with oil.
  2. In a blender, combine cottage cheese, eggs, corn starch, maple syrup and vanilla. Blend until smooth.
  3. Pour onto the prepared baking sheet, spread out evenly. Bake for 30 minutes, then allow to fully cool (this is important so the wrap doesn’t fall apart).
  4. While that cools, prepare the filling. Add the dates, butter, and cinnamon to a small blender and mix until smooth, use 1 to 2 tablespoons of the soaking water to achieve a spreadable consistency.
  5. Once the wrap is cooled, gently spread the filling over it and sprinkle with your current phase of beeya seed cycling blends. Cut the wrap into 4 equal rectangles, then carefully roll up each one.
  6. Brush each one with melted butter then sprinkle with a mixture of coconut sugar and cinnamon.
  7. Finish with a drizzle of vanilla bean yogurt or a simple glaze as shared in the ingredients. This recipe makes 2 servings, so each serving contains 1/2 a scoop of beeya.
