Cottage Pesto Toast Recipe
A toast like this one is great for a case of the hungries - it’s high protein, fiber, and healthy fats.
Serves: 1
Prep time: 5 mins
Ingredients:
- 1 gluten-free or Ezekiel toast
- a handful of arugula
- 1/4 cup cottage cheese
- 1 tsp pesto
- 1 tsp olive oil
- 3 sliced cherry tomatoes - optional
- a pinch of sea salt
- 1/2-1 scoop beeya
Steps:
- Scatter some arugula on the toast then spread the cottage cheese out over top.
- Swirl the pesto into the cottage cheese and drizzle with olive oil.
- Top with the cherry tomatoes, sea salt and your daily scoop of beeya for a nourishing snack.
