Chipotle Honey Smashed Sweet Potatoes Recipe

Ingredients:
Smashed Sweet Potatoes:
- 4 small sweet potatoes
- 1 Tbsp olive oil
- pinch of sea salt
Chipotle Honey:
- 2 Tbsp ghee or butter, melted
- 2 Tbsp honey
- 1 tsp chipotle powder or chili powder
- pinch of chili flakes
Avocado Lime Mayonnaise (optional):
- 1 avocado
- 1/2 lime, juiced
- 1/3 cup avocado oil mayonnaise
- 1/3 cup thick yogurt or sour cream
- pinch of sea salt
Cilantro Lime Vinaigrette (optional):
- 1 Tbsp lime juice
- 1 small shallot, finely diced
- 2 Tbsp olive oil
- 2 Tbsp cilantro, chopped
- pinch of sea salt
Steps:
- Preheat the oven to 400°F. Slice the sweet potatoes into ½-inch thick rounds and place them on a large parchment paper lined baking sheet.
- Toss the sweet potatoes with olive oil and salt. Then spread them out into one even layer and bake for 20 minutes or until tender when pierced with a fork. Remove from the oven and switch the oven to broil.
- Stir the chipotle honey ingredients together in a small bowl.
- Smash the potato rounds lightly with a fork then drizzle some chipotle honey over each one. Return the sweet potatoes to the oven (near the top) and broil for 5 minutes or until they begin to show a bit of color. Keep an eye out so they don't burn.
- Whisk all of the vinaigrette ingredients together in a separate small bowl.
- To make the avocado mayo, combine everything in a wide mouth mason jar and mix until smooth with an immersion blender (a regular blender or food processor works too).
- Once the sweet potatoes are done in the oven, swirl the avocado dip out on a platter, then top with the sweet potatoes, followed by a drizzle of the vinaigrette.
Note:
To turn this side into a full meal we love serving it on top a bed of greens, like chopped romaine or dino kale, and adding a protein, like chicken or beans.
