Chipotle Honey Smashed Sweet Potatoes Recipe

Ingredients: 

Smashed Sweet Potatoes:

  • 4 small sweet potatoes
  • 1 Tbsp olive oil
  • pinch of sea salt

Chipotle Honey:

  • 2 Tbsp ghee or butter, melted
  • 2 Tbsp honey
  • 1 tsp chipotle powder or chili powder
  • pinch of chili flakes

Avocado Lime Mayonnaise (optional):

  • 1 avocado
  • 1/2 lime, juiced
  • 1/3 cup avocado oil mayonnaise
  • 1/3 cup thick yogurt or sour cream
  • pinch of sea salt

Cilantro Lime Vinaigrette (optional):

  • 1 Tbsp lime juice
  • 1 small shallot, finely diced
  • 2 Tbsp olive oil
  • 2 Tbsp cilantro, chopped
  • pinch of sea salt

Steps:


  1. Preheat the oven to 400°F. Slice the sweet potatoes into ½-inch thick rounds and place them on a large parchment paper lined baking sheet.
  2. Toss the sweet potatoes with olive oil and salt. Then spread them out into one even layer and bake for 20 minutes or until tender when pierced with a fork. Remove from the oven and switch the oven to broil.
  3. Stir the chipotle honey ingredients together in a small bowl.
  4. Smash the potato rounds lightly with a fork then drizzle some chipotle honey over each one. Return the sweet potatoes to the oven (near the top) and broil for 5 minutes or until they begin to show a bit of color. Keep an eye out so they don't burn.
  5. Whisk all of the vinaigrette ingredients together in a separate small bowl.
  6. To make the avocado mayo, combine everything in a wide mouth mason jar and mix until smooth with an immersion blender (a regular blender or food processor works too).
  7. Once the sweet potatoes are done in the oven, swirl the avocado dip out on a platter, then top with the sweet potatoes, followed by a drizzle of the vinaigrette.

    Note:

    To turn this side into a full meal we love serving it on top a bed of greens, like chopped romaine or dino kale, and adding a protein, like chicken or beans.
