Charred Elote Pasta Salad Recipe

Ingredients:

Salad:

  • 2 cobs of fresh corn
  • 1/2 red onion, finely sliced
  • 1/2 jalapeño, finely chopped
  • 1 lime, juiced
  • 1 tsp honey
  • sea salt to taste
  • handful of chopped cilantro
  • 1 avocado, sliced
  • 1/2 cup split cherry tomatoes
  • 2 cups cooked pasta (we love Jovial gluten-free or einkorn; quinoa is another nice alternative)
  • 1-2 cups chopped romaine lettuce
  • ½ cup cotija cheese or crumbled feta (optional)
  • beeya seed cycling blends (optional)

Dressing:

  • 1/4 cup creme fraiche
  • 3 Tbsp avocado oil mayo
  • 1 tsp hot smoked paprika
  • 1/2 lime, juiced
  • 1 garlic clove, crushed
  • 2 tsp olive oil
  • sea salt and pepper to taste

Instructions:

 

  1. Char the corn: Grill or roast the corn cobs until slightly charred, then remove the kernels with a knife. Set aside.
  2. Pickle the onions: In a small jar, combine the finely sliced red onion, chopped jalapeño, lime juice, honey, and a pinch of salt. Shake and allow to pickle at least 10 minutes.
  3. Prepare the salad: In a large salad bowl, combine the cooked pasta, charred corn, pickled onions (including the pickling liquid), split cherry tomatoes, chopped cilantro, and chopped romaine.
  4. Make the dressing: In a separate small bowl, whisk together the creme fraiche, avocado oil mayo, hot smoked paprika, lime juice, garlic, olive oil, sea salt, and pepper until smooth and well combined.
  5. Assemble the salad: Pour the dressing over the salad and toss to coat evenly. Top with sliced avocado and, if desired, sprinkle beeya seed cycling blends for added nutrition. Divide the salad into two servings and enjoy!

        Note:

        For an extra protein boost, add a grilled chicken breast to your salad. Alternatively, skip the pasta and enjoy it as a snack with tortilla chips.
