Makes: 1 drink
Prep Time:10 mins
Cook time: none
Ingredients:
Caramel Rim:
- 1 tsp peanut butter
- 1/4 tsp coconut oil, melted
- 1 tsp maple syrup
- flaky sea salt, to sprinkle on the rim
Mocktail:
- 1 scoop beeyavibe
- 1 green apple, diced
- 1 tsp lemon juice
- 1 tsp lime juice
- 1 tsp maple syrup
- 2-3 spinach leaves (for color)
- 1/2 cup of water
Instructions:
- In a small bowl, mix together the peanut butter, melted coconut oil, and maple syrup. If it needs to thicken, just pop it into the freezer for a minute.
- In a blender, combine the diced green apple, lemon juice, lime juice, maple syrup, spinach leaves, and water. Blend until smooth.
- Pour the mixture through a fine mesh strainer into a shaker. Once finished add a scoop of beeyavibe and stir to dissolve (optional, the drink tastes good without it too).
- Prepare the rim of the glass, use the caramel to coat the rim then sprinkle with a little sea salt.
- Add ice to the shaker and shake to chill. Strain while pouring into the rimmed glass. As garnish, we added a slice of caramel dipped green apple.
