This crumble is sure to be a crowd pleaser featuring antioxidant rich blueberries, a grain-free crumble topping, and natural sweeteners like honey or maple syrup. Even the kids will love this one!

Ingredients:
Filling:
- 1/2 cup fresh blueberries
- 1-2 peaches, sliced
- 2 Tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- 1 tsp lemon juice
Crumble Topping:
- 1/4 cup oat flour
- 1/4 cup rolled oats
- 2 Tbsp room temp coconut oil or butter
- 2 Tbsp honey or maple syrup
- 1/4 teaspoon nutmeg
- pinch of salt
To Serve:
- vanilla protein ice cream - optional
- 1 scoop beeya seed cycling blends
Instructions:
- Preheat the Oven: Set the oven to 400°F.
- Prepare the Filling: In a small bowl, combine the blueberries, peach slices, honey or maple syrup, vanilla extract, and lemon juice. Mix until the fruit is well-coated.
- Make the Crumble Topping: In a separate bowl, mix together the oat flour, rolled oats, coconut oil or butter, honey or maple syrup, nutmeg, and a pinch of salt. Stir until the mixture resembles a crumbly texture.
- Assemble the Crumble: Place the fruit mixture into 4 oven-safe ramekin or a baking dish. Sprinkle the crumble topping evenly over the fruit.
- Bake: Place the ramekins on a baking sheet and bake in the preheated oven for 20 minutes, or until the topping is golden brown and the fruit is bubbling.
- Serve: Let the crumble cool slightly before serving. Serve warm with a scoop of vanilla protein ice cream. Sprinkle some beeya seed cycling blends on top for an added nutritional boost.
