Almond Granola Blueberry Bark Recipe

An unbeatable PMS treat that’s indulgent and literally bursting with antioxidants.

Serves: 2-4 portions

Prep time: 5 mins + chill time


Ingredients:

  • 1/4 cup melted dark chocolate
  • 1 cup fresh blueberries*
  • 2 scoop beeya
  • 1/4 cup almond granola - or other preferred granola
  • 1/2 tsp coconut oil
  • 1 Tbsp almond butter

Steps:

  1. Stir together the melted chocolate, blueberries, and 1 scoop of beeya. 
  2. Pour the blueberry mixture onto a parchment lined platter and flatten out into an even layer.
  3. Gently melt the coconut oil and almond butter together then drizzle over the blueberry bark. 
  4. Finish by sprinkling over the granola of choice and the remaining scoop of beeya.
  5. Place into the freezer until set, then store in the fridge once firm. 

Note:

Make sure the blueberries are room temp and dry if they’ve been rinsed to avoid the chocolate seizing.
