Breakfast “Poke” Bowl Recipe

A perfect savory breakfast. Not only is it delicious, this blood sugar-friendly breakfast bowl will satisfy your hunger all morning long.

Prep time: 7 mins


Ingredients:

  • 1/2 cup cooked white rice (sushi rice or reheated leftover rice)
  • 1/2 an avocado, sliced
  • 1 fried egg
  • a handful of sliced scallions
  • a handful of sprouts
  • 1/2-1 scoop beeya
  • dressing - see tips below

Steps:

  1. Place the cooked rice in the bottom of a bowl then top with the sliced avocado.
  2. Add the egg, sprouts, and scallions to the bowl. 
  3. Drizzle with your choice of dressing such as sriracha mayo, soy & tahini combo, yuzu hot sauce, or just tamari. 
  4. Garnish with beeya seeds and enjoy!

Note: this breakfast can be recreated in so many new ways, switch up the sprouts for other veggies you have on hand and try different types of dressings.
